Plin represent an identifying element of Piedmontese gastronomic tradition. A reinterpretation of the classic ravioli for an elegant and popular dish, the child of that “pizzicotto” (plin in dialect) used to enclose the filling between one raviolo and the next. A dish known since 1846 that has its roots in the ingenuity of the local peasant civilization, skilled at recovering food scraps and transforming them into an iconic product now known throughout Italy and the rest of the world.
Hence, the philosophy of PLIN, the Projects for Learning Innovation was born: from a diverse amalgam of hard work, vision and talent.
